The objective of this study is the determination of physicochemical characteristics of raw milk marketed in the city of Djelfa. Thirty-six (36) samples were collected from three (03) different sources (12 samples from each point of sale) and analysed for the physicochemical characteristics by the Lactoscan MGG analyzer. Results showed a large variation in pH, density, lactose, protein, fat, solid not fat (SNF) and temperatures but generally the national and international requirements standard. The contents of protein, fat and density are lower than that described by AFNOR and Algerian standards respectively while temperature values and lactose content are higher.
